Chicken Enchiladas







We had our chicken enchiladas last night for dinner and today I am posting the recipe. This is a really simple one; I just adjust ingredients to feed my family. They say it makes 4-6~~not in my house! We are hearty eaters so I just add some more of everything.






*Chicken Enchiladas*






2 cups COOKED chicken



1 Cup Chopped green bell pepper



1 80z package of cream cheese (cubed)



1 jar of salsa divided



8 flour tortillas (6" size)



1 pkg of Mexican style cheese



1/4 cup milk






Stir chicken, peppers, cream cheese and 1/2 cup salsa in a saucepan over low heat until cream cheese is melted.






Spoon some of your chicken mixture into tortilla and roll up; place seam side down in lightly greased baking dish. Repeat.






In a saucepan on low heat, combine milk and 1 1/2 cups of Mexican style cheese. Stir until smooth. Pour over tortillas and cover with foil.






Bake at 350 degrees until thoroughly heated (approximately 20 minutes). Sprinkle remaining cheese on top and add remaining salsa.

I've been walking around my house thinking of making some changes to all my stuff. I love changing my items around here and there but now I think I want to really switch it up. Maybe it's the anticipation of the change of seasons? I'm not sure. I'm going to make a few switches and photograph it so you can see what I've done. Don't you love looking at your stuff and remembering where you got it? I was thinking that about this large set of stacking boxes I have that I LOVE. We had gone to the Green Dragon Amish outdoor market in Ephrata, Pennsylvania. I was in one of the "booths", and I saw these great stacking boxes. They were on clearance for only $12. I couldn't pass them up! They were going to be cumbersome to carry yet I knew if I didn't take them right there and then, they would be gone. My sister-in-law actually passed them up because she didn't want to carry them. My dilemma was that the car was very far away in the VERY crowded parking lot and we were right smack in the middle of the market. Plus, I have a fear of getting lost at those big markets. Well, we bought them and we carried those stacking boxes for a good part of the walk through, passing them back and forth! It was funny. I was so thrilled I had them, I didn't mind! We juggled them till lunchtime when we were once again closer to the parking lot! I always think of that when I see my boxes.
